The vibrant and fresh cauliflower that is abundant in the winters is packed with flavours that blend well with other ingredients to make a salad that is sure to be in demand for seconds. Roasting the vegetable brings about a duality of textures with crispy edges and a tender floret that offer great contrast.

1 medium-sized cauliflower, into florets 1 large onion, cut into wedges 1 avocado, diced 2 tablespoons olive oil 1 teaspoon lemon zest 1 teaspoon cumin powder 1 teaspoon paprika powder 2 teaspoons maple syrup/honey ¼ cup chopped parsley ¼ cup chopped pistachios ½ tablespoon balsamic vinegar Salt and pepper, to taste

Combine the lemon zest, spice powders, maple syrup, salt and pepper with the olive oil and toss the cauliflower and onions in the mixture.

Transfer to a baking sheet and bake in a preheated oven for 20 minutes at 200°C.

Cool slightly, once cooked and combine with the remaining ingredients, adjusting seasoning if needed.

Serve warm with some crusty bread or warm tortillas on the side.
