Made with turai, urad dal, tamarind and mustard seeds, this healthy and tasty chutney is perfect to pair with your boring meals. Here is an easy recipe to make ridge gourd chutney at home.

1 cup roughly chopped ridge gourd 1 teaspoon urad dal 2 green chilli ½ inch tamarind 3 cloves garlic ½ teaspoon organic jaggery ½ teaspoon oil For Tempering: 1 teaspoon oil ½ teaspoon mustard seeds 5-6 curry leaves 1 pinch asafoetida

Heat oil in a pan and add urad dal and fry till they turn light brown. Then add green chilies, garlic, tamarind, sauté for another minute.

Now fry ridge gourd in oil until it turns light brown and let it cool down. Then grind together everything along with salt and jaggery.

Now prepare the tempering and add it to the chutney and serve with idli, dosa, rice or roti.
