The whole leg of a goat, also known as the raan cut, has plenty of proteins, fat and collagen—all of which make for a rich stew base for cold winters. Here is an easy, pressure cooker recipe for the perfect goat’s leg stew you can make this winter for effortless dinners.

1 goat leg or raan, cut into large chunks 3-4 onions, finely chopped 1 red bell pepper, finely chopped 3-4 garlic cloves, minced ½ inch ginger, grated 1 bay leaf 1 tbsp cumin seeds 1 cinnamon stick 2 cardamom pods

2 green chillies, finely chopped 1 tsp turmeric powder 1 tsp coriander powder 1 tsp garam masala 4 cups water Salt, to taste 2 tbsp oil Coriander leaves, for garnish

Heat oil in a pressure cooker, then add the bay leaf, cumin, cinnamon, cardamom, garlic and ginger.
Once these stop spluttering, add the onions, bell pepper and continue cooking until they turn almost mushy.

Now add the goat’s leg chunks, salt and the powdered spices. Saute the mix for 10-15 minutes.
Once the goat’s leg starts caramelising and turning brown on the outside, adjust the salt, add water and cook for 3-4 whistles.
