Kadai paneer is a popular Punjabi dish which features paneer prepared in a rich and spicy tomato gravy. Known for its vibrant colour and aroma, you can make it at home with this easy recipe.
For The Masala: 2 tbsp coriander seeds 2 tsp cumin seeds 2 tsp fennel seeds 3 dried red chillies 2 tsp black peppercorns
For The Gravy: 3 tbsp vegetable oil 1 onion 1 capsicum 1 inch ginger 2 cloves garic 2 tomatoes 1 tsp red chilli powder 1/2 tsp turmeric powder 1 tsp garam masala powder 1/2 tbsp coriander-cumin powder Salt to taste 1 cup water 200g paneer 1 tsp dried fenugreek leaves Chopped coriander leaves for garnish
Dry roast the coriander seeds, cumin seeds, fennel seeds, red chillies, and peppercorns. Grind into a coarse powder.
Saute chopped onion, capsicum, ginger, and garlic. Add chopped tomatoes.
Mix in red chilli powder, turmeric powder, garam masala, coriander-cumin powder, and salt.
Pour some water and bring the gravy to a boil. Reduce the heat and simmer for 10 minutes.
Add pan-fried paneer cubes and cook for another 2-3 minutes.
Stir in the ground masala and kasuri methi. Garnish with coriander leaves and serve.
