Celebrate the Republic Day with this delicious and healthy tricolour idli made with four simple steps.

175 g idli rice (soaked) 75 g urad dal (soaked) 10 g salt 25 g carrot 25 g spinach

Grind rice and dal in stone grinder until smooth. Transfer to a bowl, add salt and mix well. Let it ferment for 12 hours in room temperature.

Next, prepare carrot and spinach puree separately. Divide the batter into three equal parts. Combine carrot and spinach puree in two parts separately for making orange and green colour idli.

Place orange batter in a round mould followed by white and then green batter.

Steam for 20 minutes and serve with coconut chutney or coriander chutney.
