Since hydrating fruits are all the rage when it’s hot outside, enjoying juicy chunks of watermelon with salty feta and fresh herbs can double up as not only a snack, but also a light lunch. Get some respite from the scorching heat by enjoying this cold, with a generous spritz of lemon juice.
1 cup watermelon cubes 50 grams feta cheese 1 cucumber, diced 1 small onion, sliced Juice of 1 lemon 1 tablespoon olive oil 7-8 mint leaves Salt and pepper, to taste
Use half a lemon and some salt to pickle the sliced onions for 10-15 minutes.
Combine the remaining lemon juice with salt, pepper and olive oil before setting aside.
Assemble the watermelon, cucumber and pickled onions on a plate followed by the dressing and fresh mint leaves.
Crumble the feta cheese on top and serve.
