Cheese-stuffed vada pav is a delicious twist on the traditional Mumbai street food, where a spicy potato fritter is stuffed with gooey cheese and served in a bun with chutneys. Enjoy a homemade version of this fusion snack to combat gloomy monsoon evenings and make your weekend extra special.
4 medium potatoes, boiled, peeled, and mashed 1 teaspoon mustard seeds 1 teaspoon cumin seeds 1 tablespoon oil 1-2 green chilies, finely chopped 1 inch piece of ginger, grated 8-10 curry leaves, finely chopped 1 teaspoon turmeric powder Salt, to taste 1 tablespoon lemon juice 2-3 tablespoons chopped coriander leaves ½ cup mozzarella cheese, grated
1 cup chickpea flour ¼ cup rice flour ½ teaspoon turmeric powder 1 pinch asafoetida Salt, to taste Water, as needed
Combine all the ingredients for the batter and set aside.
Heat some oil in a pan and add the mustard and cumin seeds, green chilies, ginger and curry leaves to saute for a minute.
Tip in the mashed potatoes, followed by the turmeric and salt before mixing well to combine.
Continue cooking for a couple of minutes, before adding the lemon juice and chopped coriander and cooling slightly.
Take a small portion of the potato mixture in your hand and flatten slightly before placing some cheese in the centre and folding it in.
Dunk the patty in the batter and deep fry in hot oil until the covering is set and it becomes golden-brown and crisp on the outside.
Drain on a paper towel before sandwiching it into fresh pav, along with chutneys of your choice. Serve hot.
