If you want to get tired of serving dosa, idli, or vada with coconut and tomato chutney, try pairing them with mint chutney. It is refreshing and a perfect companion in summer to accompany North as well as South Indian dishes. Here is a recipe.
½ cup coriander leaves 2-3 garlic cloves 1 cup mint leaves Salt to taste ½ teaspoon sugar 1-2 green chillies 1 cup curd ¼ inch ginger ½ teaspoon chaat masala ½ teaspoon roasted cumin powder
If you don’t have roasted cumin powder, roast a tablespoon of cumin seeds in a hot pan and grind them into fine powder.
Add coriander leaves and mint leaves to the food processor. Keep the juicy stem because it elevates the flavour profile of chutney.
If you like the creamy consistency of chutney, add curd along with ginger, green chillies, garlic, sugar, and salt to taste.
Blend the ingredients. Check if you need to add water to adjust the consistency.
Add chaat masala and cumin powder and blend again. Check the flavours of the chutney.
Serve the chutney with the dosa, idli, pakora, and other dishes of your choice.
