This light and zesty Tuscan-style salad is the ideal lunch bowl to throw together when you’re short of time and still don’t want to compromise on taste and flavour.
2 tomatoes, diced 1 onion, sliced 1 cucumber, diced 3 slices sourdough toast Juice of ½ lemon
Juice of ½ lemon 3 tablespoons olive oil ½ teaspoon Dijon mustard Salt and pepper, to taste
Add the sliced onions and lemon juice to a large mixing bowl and let them pickle for 20-25 minutes.
Toss in the remaining ingredients for the salad, except the bread, and combine well.
Whisk together the ingredients for the dressing and pour over the vegetables.
Cut the slices of bread into croutons and mix it into the salad.
Check for seasoning and adjust if necessary. Serve immediately.
