Deriving its name from the street carts or thattu vandi that make soft, spongy dosas to mop up spicy curries or chutney, the thattu dosa can be made using a homemade or store-bought batter. Add your own variation by making them with egg, stuffing with kheema or enjoying it simply with some chutneys.
1 cup dosa batter 1 egg 1 teaspoon salt ½ teaspoon red chilli powder 2 teaspoons melted ghee
Using a few tablespoons of water, dilute the dosa batter slightly and season with salt.
Whisk the egg with salt and chilli powder before setting aside while you heat a pan.
Ladle the dosa batter on the hot surface and spread only slightly, allowing it to rise into a fluffy disc.
As the top sets, pour the whisked egg on top before flipping and cooking along with some ghee.
Fold over once the egg sets and serve hot with an accompaniment of choice.
