INGREDIENTS

8-10 large tomatoes 2 tablespoons sugar 1 tablespoon lemon juice 1 teaspoon cumin powder 1 teaspoon paprika powder Salt, to taste

STEP 1

Blanch the whole tomatoes in some warm water for 10 minutes and allow them to cool completely.

STEP 2

Peel the skin off and chop them roughly before adding to a pan, along with the paprika and cumin powders.

STEP 3

Cook until the mixture thickens and condenses, before adding in the lemon juice and salt.

Continue to cook further until the colour deepens and all the moisture has evaporated completely.

Cool before transferring to an air-tight container and refrigerating for up to one week.
