Rajgira chikki is a sweet delight that comes loaded with nutrients. Amaranth seeds are used to prepare this dish which often makes it to the festive spread during harvest festivals. Here is how to make it.
A pinch of rock salt 1.2 cups amaranth seeds ½ tsp cardamom powder 2 tbsp ghee ¼ cup chopped cashew ¾ cups chopped jaggery
Heat ghee in a pan and combine jaggery and salt in it.
Add cardamom, cashews, and amaranth seeds to the pan.
After 2 minutes, spread the mixture on a tray lined with an aluminium sheet.
In 5 minutes, the blend will start solidifying. Make cuts in it using a sharp knife.
Let the sweet mixture rest for 20 minutes.
Cut the chikki into multiple pieces and enjoy.
