For those with hectic schedules, ready-to-make curry paste is a lifesaver when it comes to making authentic, flavorful dishes quickly.
2 onions, roughly chopped 4 cloves of garlic 1-inch piece of ginger, peeled and chopped 2 tomatoes, chopped 2 green chilies, chopped 1 tablespoon coriander seeds 1 tablespoon cumin seeds 1 teaspoon turmeric powder 1 teaspoon red chilli powder Salt to taste 2 tablespoons vegetable oil
Heat vegetable oil in a pan over medium heat. Add coriander seeds and cumin seeds, and toast until fragrant, about 1-2 minutes. Add chopped onions, garlic, and ginger to the pan. Sauté until the onions turn golden brown, around 5-6 minutes.
Stir in chopped tomatoes, green chilies, turmeric powder, red chilli powder, and salt. Cook until the tomatoes soften and the mixture thickens, approximately 8-10 minutes.
Allow the mixture to cool slightly, then transfer it to a blender or food processor. Blend until smooth, adding a splash of water if needed to achieve the desired consistency. Your ready-to-make curry paste is now complete!
Store it in an airtight container in the refrigerator for up to one week, or freeze it for longer storage. Simply scoop out the desired amount whenever you need to add a burst of flavour to your favourite curry dishes.
