Raw mango rasam is here, and it's delicious. A delicious variation from the conventional rasam, this combines sour, sweet, and spicy flavours in a perfect balance.
2 raw mangoes 1 inch ginger 2 green chillies 2 garlic cloves 2 cups water or more 2 tbsp jaggery powder or more 1 tsp pepper 1 onion, sliced Salt to taste 1 tsp black salt 1 tbsp oil 1 tbsp mustard seeds 2 dried red chillies 15-20 curry leaves
Roast the raw mangoes, ginger, garlic, and green chillies on an open flame until charred and cooked through. Peel the mangoes and chop them roughly. Peel the ginger as well.
Blitz the roasted ingredients to a smooth puree with some water. Add the puree to a bowl along with jaggery, pepper, onion, salt, and black salt. Mix well.
For the tempering, heat oil in a pan and add mustard seeds, dried red chillies, and curry leaves. Let it pop. Pour the tempering over the rasam. Serve with rice or as is, and dig into this tangy Raw Mango Rasam!
