Rava Dhokla is a popular, soft, spongy, steamed snack from Gujarat, made with semolina (rava), yoghurt, and spices. The dish is quick to prepare and is a favourite for breakfast or evening tea.
1 cup rava (semolina) 1/2 cup yoghurt 1/2 cup water 1 tbsp ginger-green chilli paste 1/2 tsp turmeric powder
1/2 tsp baking soda 1 tsp lemon juice Salt 1 tbsp oil 1 tsp mustard seeds 1 tsp sesame seeds A pinch of asafoetida (hing) Fresh coriander leaves Green chillies
In a bowl, mix rava, yoghurt, water, ginger-green chilli paste, turmeric powder, and salt. Stir well to make a smooth batter. Let it rest for 15-20 minutes.
Grease a steaming tray or any flat dish that fits into your steamer or pressure cooker. Fill the steamer with water and bring it to a boil.
Just before steaming, add baking soda and lemon juice to the batter. Mix gently. The batter will become slightly fluffy.
Pour the batter into the greased tray. Place the tray in the steamer and cover. Steam for about 15-20 minutes or until a toothpick inserted comes out clean.
Heat oil in a small pan. Add mustard seeds, sesame seeds, and a pinch of hing. When the seeds splutter, pour the tempering over the steamed dhokla.
Garnish with chopped coriander leaves and slit green chilies. Cut into pieces and serve.
