Make these fluffy rava dhokla to pack for a lunchbox, eat for breakfast or even to enjoy with a cup of tea in the evening. Pair it with some fresh green chutney for added flavour.
½ cup semolina 1 cup yoghurt 1 teaspoon green chilli-ginger paste ½ teaspoon baking soda 1 tablespoon vegetable oil 1 teaspoon mustard seeds 1 teaspoon sesame seeds 2 teaspoons chopped coriander Salt, to taste
Combine the semolina, green chilli-ginger paste, yoghurt and some salt in a bowl and rest for 20 minutes.
Add some water to make a thick batter and pour into a greased baking tin.
Steam for 12-15 minutes while you make a tempering by heating up the oil and adding the mustard and sesame seeds.
Allow it to splutter before spooning it over the unmoulded dhokla and sprinkling freshly chopped coriander on top.
Cut into squares and serve warm with green chutney.
