Considered to be one of the most special rice offerings to the presiding deities of Puri in Odisha, the kanika pulao is a golden-yellow, sweet rice preparation that is enriched with ghee and dry fruits. Savour this delicacy alongside a curry or lentil dish of your choice for a substantial meal.
1 cup basmati rice 2 bay leaves 2 cloves 1 black cardamom 3 green cardamom ¼ cup sugar 7-8 cashew nuts, broken 7-8 raisins 1.5 teaspoons cinnamon powder 1 teaspoon turmeric powder ½ teaspoon nutmeg powder 1 pinch salt 4 tablespoons ghee 2 cups water
Rinse and soak the basmati rice for 30 minutes in some water and drain.
Heat the ghee in a pressure cooker and add the whole spices to bloom.
Add the cashews and raisins to fry until golden-brown, before tipping in the soaked grains.
Toss well to combine before adding the spice powders, sugar and salt.
Pour in the water and bring to a boil, before pressure cooking for 1-2 whistles.
Garnish with more dry fruits and serve hot.
