2 Cups Milk powder 1 cup Milk 1/2 cup Sugar 1/2 cup Ghee 1 tsp Each of 3-4 food colours Almond shavings (for garnish) Extra ghee/ oil for greasing
Melt ghee in a pan, add the milk and stir. Lower the heat and add the milk powder. Keep stirring.
Add the sugar and stir to dissolve it. Once the mixture thickens, mix in the cardamom powder. Stir well.
Turn off the heat and spoon the mixture carefully into a bowl. After a few minutes, divide the mixture into 4 separate bowls
In each bowl, mix in the food colouring of your choice. Take a tray with tall sides and grease it well with ghee or oil.
Take one of the bowls of barfi mix and transfer to the tray. Spread well with a spatula, but not too thinly.
Take another bowl and spread its coloured mixture on top of the first layer. Continue in this way until all layers have been created.
Now cut the layered shape into small squares. Carefully lift each barfi square and place it on a plate. Garnish with almond shavings and serve.
