Ramadan 2024: Rampur Special Dal Phulki To Make For Iftaar

A classic Rampuri style, Dahi Phulki is prepared with besan. This recipe is a variation of dahi bhalla that uses besan as an ingredient; it calls for dipping pakodas in the batter and serving them with sweetened curd. This snack is ideal for Ramadan because it doesn't need any grinding or extra preparation, and the batter is ready in a flash.  

Ingredients

Fir Besan Pakoda 2 cup besan ¼ tsp turmeric ½ tsp chilli powder A pinch hing ½ tsp salt water A pinch baking soda 2 tbsp coriander, chopped Oil, for frying

For curd 2 cup curd ½ tsp chilli flakes 2 tbsp sugar ½ tsp cumin powder 1 tsp kala namak ½ tsp salt ½ tsp garlic paste 1 cup wate

Step 1

In a large bowl take 2 cup curd, ½ tsp chilli flakes, 2 tbsp sugar, ½ tsp cumin powder, ½ tsp kala namak, ½ tsp salt, ½ tsp garlic paste. Mix well making sure everything is well combined. Add 1 cup water and prepare a flowing consistency curd mixture. Keep aside. 

Step 2

In a bowl take 2 cup besan, ¼ tsp turmeric, ½ tsp chilli powder, pinch hing and ½ tsp salt. Mix well making sure everything is well combined. Now add water and prepare a smooth consistency batter. Further, add pinch of baking soda, 2 tbsp coriander and mix well. 

Step 3

Now wet your hand and drop small portions of the batter into the hot oil. Stir occasionally and fry on medium flame. Fry to golden brown and drain off extra oil. 

Step 4

Transfer into the curd bowl and dip completely. Let is rest for 2 hours so that pakoda absorbs curd well. To serve, top with green chutney, tamarind chutney, cumin powder, chilli powder, sev and coriander.
