Experience the essence of Ramadan with the indulgent delight of Malai Phirni, a creamy rice pudding infused with fragrant spices, perfect for breaking the fast and satisfying sweet cravings during this sacred month.
1/2 cup rice, soaked 1 litre milk 1/2 cup sugar 1/4 cup malai (clotted cream) A pinch of saffron strands 1/4 tsp cardamom powder Chopped nuts for garnish (almonds, pistachios) Edible silver leaves for garnish (optional)
Drain soaked rice and grind into a coarse paste. In a heavy-bottomed pan, boil milk and add the rice paste, stirring continuously to prevent lumps. Simmer on low heat until the mixture thickens, stirring frequently.
Add sugar, saffron, and cardamom powder, continuing to cook until the sugar dissolves. Once thickened to desired consistency, remove from heat and mix in malai.
Pour into serving bowls, garnish with chopped nuts and silver leaves. Chill in the refrigerator before serving. Enjoy the creamy goodness of Malai Phirni during Ramadan festivities.
