You can customise the cakes as per your siblings preferences and the act of baking adds a personal touch, making the festival even more special and memorable.
1 and 3/4 cups all-purpose flour 1 and 1/2 cups granulated sugar 3/4 cup unsweetened cocoa powder 1 and 1/2 tsp baking powder 1 and 1/2 tsp baking soda 1 tsp salt
2 large eggs 1 cup whole milk 1/2 cup vegetable oil or melted butter 2 tsp vanilla extract 1 cup boiling water
Preheat the oven to 175°C. Grease with oil and add flour to two round cake tins. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
In another bowl, whisk together the eggs, milk, oil and vanilla extract.
Mix both sets of ingredients with a spatula.
Stir in boiling water to the batter. The batter will be thin, but this ensures a moist cake. Divide the batter evenly between the prepared cake tins.
Bake for 30-35 minutes. Remove the cakes from the oven and let them cool for 10 minutes. The cake can be frosted using icing or simply dusted with powdered sugar.
