Rajasthani mirchi vada is a delicious snack enjoyed by people who love spicy food. Crunchy chillies stuffed with a soft filling of potatoes are the ultimate way to check how much spice you can handle. Here is its quick recipe.
4-6 large green chillies 3-4 boiled potatoes Salt to taste 1 cup besan Water as needed 1.5 tsp coriander 1 tbsp coriander leaves ½ tsp red chilli powder ¼ tsp garam masala ½ tsp fennel powder Oil for frying
Wash the chillies and pat dry them using paper towels. Slice them in the middle and deseed them.
Peel off the skins of potatoes and mash them in a bowl. You can leave a few chunks behind.
Sprinkle salt and other spices over boiled potatoes. Combine the ingredients well.
Stuff the potatoes inside green chillies and dip them in a thick blend of besan, salt, and red chilli powder.
Drop the coated chillies in a kadhai of hot oil and deep-fry until the crust is crispy.
Serve the mirchi vada with ketchup and chutney of your choice.
