Made with chopped green chillies, cumin seeds, coriander powder and other spices, this pickle is perfect to boost the flavour of your meals. Here is an easy recipe to make Rajasthani mirchi ke tipore at home:

1 1/2 cups green chilies (chopped), 2 tbsp cooking oil, 1 tbsp fennel seeds, 1 tsp mustard seeds, 1 tsp cumin seeds, 1/4 tsp turmeric powder, salt as per taste, 1 tbsp dried mango powder, 1 tbsp coriander powder, a pinch of red chili powder, 2 tbsp water, 1/4 tsp asafoetida

Heat oil in a pan and add asafoetida, mustard seeds, cumin seeds, and fennel seeds. When the seeds start to splutter, add chopped green chilies.

Saute for about 3-4 minutes and add turmeric powder, salt, coriander powder, chilli powder, dried mango powder and mix well. Cook for 1 minute.

Splash with 2 tbsp of water and cook for more 2 minutes. Once cooked, turn off the heat and your instant pickle is ready to enjoy.
