Kachori is a popular Indian street food that’s relished in almost all parts of the country. To have something savoury to pair with your hot cup of chai, you can make Rajasthani-style khasta kachori.
2 cups maida 1/4 cup ghee 1/2 teaspoon salt 1/2 cup soaked moong dal 1 tablespoon oil 1/2 teaspoon cumin seeds A pinch of hing 1 green chilli 1 teaspoon coriander seeds 1/2 teaspoon fennel powder 1 teaspoon red chilli powder 1/2 teaspoon garam masala 1/2 teaspoon ginger powder Salt to taste Oil for frying
Knead the dough by mixing maida, salt, ghee, and water. Cover it with a damp cloth.
Grind the soaked dal and mix cumin, hing, green chilli, coriander, and fennel powder. Cook till fragrant.
Mix in ground moong dal, red chilli powder, salt, garam masala, and ginger until aromatic.
Take small portions of the dough, roll them into circles, add a spoonful of filling and seal the edges.
Heat up oil and deep fry the kachoris until golden brown and crispy.
Serve the kachori with imli chutney and enjoy.
