The old-school classic sandwich of lacy egg omelette sandwiched between white bread was the best kind of breakfast enjoyed during train journeys. Here’s how you can make it at home.

2 eggs ½ onion, finely chopped 2 teaspoons chopped coriander 2 green chillies, chopped ½ teaspoon red chilli powder ¼ teaspoon turmeric powder 1 tablespoon milk 2 teaspoons vegetable oil 2 slices bread, toasted Salt and pepper, to taste

Whisk the eggs with the milk, salt and pepper until combined.

Add the onion, chillies and coriander, along with the spice powders.

Heat the oil in a pan and pour the egg mixture before swirling the pan to evenly spread the mixture.

Cook on a medium heat for 2-3 minutes before flipping over and cooking on the other side.

Cook for a minute or two and fold into fours and place between the slices of bread. Cut and serve.
