Railway Mutton Curry, a mild and flavourful dish, was invented during the British Raj for train journeys. This delicious, fragrant curry is slow-cooked with tender mutton and spices and is a comfort food with steamed rice or roti. Here is how to cook:
500g mutton 2 tbsp mustard oil 1 onion 2 tomatoes 1 tbsp ginger-garlic paste 2 green chillies ½ tsp turmeric powder 1 tbsp coriander powder 1 tsp red chilli powder 1/2 tsp garam masala 4-5 curry leaves 1 bay leaf 1 tsp whole spices (cloves, cinnamon, green cardamom) Salt, to taste Water Fresh coriander leaves
Coat mutton pieces with salt, turmeric, and red chilli powder. Keep aside for 15-20 minutes.
Heat mustard oil in a deep pan, and add bay leaf and whole spices until fragrant.
Sauté sliced onions until brown, then add ginger-garlic paste and cook for 1 minute.
Add chopped tomatoes and cook until soft, stir occasionally.
Add the mutton pieces and cook on medium heat until browned.
Add coriander powder, garam masala, green chillies, and curry leaves. Mix well.
Add water, cover, and cook on low heat for 45-60 minutes until the mutton is cooked. Garnish with fresh coriander leaves.
