Ragi Coconut Pudding: Easy And Healthy Homemade Recipe

Ragi coconut pudding is a smooth, melt-in-the-mouth vegan dessert made with ragi flour and coconut milk. Sweetened with jaggery and flavoured with cardamom, it’s a healthy and delicious treat topped with pistachios.

Ingredients

2 tbsp Ragi flour 2 tbsp Cane sugar 1/2 tbsp Cocoa powder 2 tsp Choco chips 1/2 cup milk 1/2 cup water 2 tbsp chopped pistachios

Step 1

Combine water and milk to make 1 cup of liquid. Mix ragi flour, cocoa powder, and cane sugar in a pan.

Step 2

Whisk in the milk-water mixture until smooth. Cook on low flame, stirring continuously until it thickens.

Step 3

Add choco chips and stir until the pudding is thick and shiny. Pour the pudding into bowls and refrigerate.

Step 4

Garnish with chopped pistachios and serve chilled.
