Loaded with nutrients, this sugar-free banana cake is the ideal sweet treat to snack on when you want something sweet with your evening cuppa. Bake this deliciously moist confection with chocolate chips and walnuts, for extra flavour.

4 tablespoons softened butter 4 tablespoons jaggery powder 2 eggs 3 ripe bananas 4 tablespoons buckwheat flour 4 tablespoons ragi flour ½ teaspoon dry ginger powder 1 teaspoon cinnamon powder 3 tablespoons walnuts, chopped 5 tablespoons chocolate chips 1 pinch salt ½ teaspoon baking soda

Mash the ripe bananas in a bowl and add the eggs to combine by whisking well.

Combine the dry ingredients in a separate bowl while you mix the jaggery powder into the banana mixture.

Toss the dry ingredients into the wet mixture and use a spatula to mix everything together.

Add the walnuts and chocolate chips to the batter and transfer to a greased tin to bake for 20-40 minutes in a preheated oven at 180°C.

Pierce a toothpick in the centre to check for doneness after 30 minutes and remove from the oven to cool in its tin for 10-15 minutes.
