This popular Indian street food combines crispy samosas with a flavourful white pea curry. This dish is a delightful blend of textures and flavours. Here’s a step-by-step recipe to make Ragda Samosa at home.
1 cup dried white peas 1 onion 2 tomatoes 1-inch ginger 2-3 cloves garlic, 2 green chilies 1 tsp cumin seeds 1/2 tsp turmeric powder 1 tsp red chilli powder 1 tsp garam masala 1 tsp coriander powder 1 tsp chaat masala
8-10 samosas 1 onion Coriander leaves 1/2 cup sev Tamarind chutney Green chutney Chaat masala Red chilli powder
Cook soaked white peas in a pressure cooker with enough water to cover the peas, for 3-4 whistles.
Heat oil in a pan. Add cumin seeds, finely chopped onions and sauté until golden brown.
Add grated ginger, minced garlic, and chopped green chilies. Add chopped tomatoes and cook until they become soft and mushy.
Add turmeric powder, red chilli powder, coriander powder, garam masala, and salt. Add the cooked white peas to the pan along with their cooking water, simmer for 10-15 minutes. Add chaat masala.
Place 1-2 samosas on a plate and slightly crush them. Pour ragda,drizzle tamarind chutney and green chutney, sprinkle finely chopped onions, fresh coriander leaves, and sev on top.
