Ragda pattice originated as the street snack of Mumbai and has been a mainstay ever since then. It comprises a deep-fried potato patty along with various chutneys, beans, spices, and chopped veggies. Here's a recipe for you to try:
For Ragda: 1 cup dried white peas 1 chopped onion 1 chopped tomato 1 tsp ginger-garlic paste Spices: 1/2 tsp each of turmeric, cumin, coriander, garam masala Salt to taste
For Pattice: 4-5 boiled, mashed potatoes 1 finely chopped green chilli 1 tsp grated ginger 1/2 tsp cumin powder Salt to taste Breadcrumbs Oil for frying Garnishes: Chopped onions, tomatoes, cilantro Sev, tamarind chutney, green chutney
Soak peas overnight, and cook until soft. Sauté onion, and ginger-garlic paste, add tomatoes, spices, and peas. Simmer 10-15 mins.
Mix mashed potatoes with chilli, ginger, cumin, and salt. Shape into patties, coat with breadcrumbs, and fry until golden.
Place pattice on a plate, top with ragda, and garnish.
