Made with quinoa grains and veggies, this tasty upma is made in a typical South Indian way. It has a tadka of mustard seeds and curry leaves, along with some urad and moong dal. Here's the recipe for Quinoa Upma.

1 cup quinoa 1 large chopped onion 2 tablespoon vegetable oil 1 teaspoon chopped ginger 1 dry red chili 1/4 teaspoon asafoetida 2 stalks curry leaves 1 teaspoon mustard seeds 1/2 teaspoon cumin seeds 1 teaspoon urad dal 1 teaspoon yellow moong dal 1/2 cup chopped carrot 1/3 cup frozen peas salt as required 2 cup water 1 chopped capsicum (green pepper) 1/4 cup chopped green beans

Heat oil and add cumin and mustard seeds. Let them splutter for a minute. Now add asafoetida, moong dal and urad dal. Saute and add chopped ginger and dry red chilli and mix.

Add chopped onions and curry leaves. Stir on low flame for a few minutes. Now add carrots, capsicum, peas and green beans. Add salt as per taste and mix. Add Quinoa, mix well and let it cook and add water and mix well. Cover the lid and let it cook until the water is absorbed. Serve it with chutney.
