Instead of semolina, try quinoa upma, a modern twist to the traditional South Indian recipes. Quinoa also makes the dish healthier and rich in fibre and protein. Here is a quick breakfast recipe.
2 cups water 1 cup quinoa Salt to taste 1 tbsp urad and chana dal 1-2 slit green chillies 1 tbsp oil ½ mixed vegetables 1 tsp cumin & mustard seeds 6-8 curry leaves 1 chopped onion 1 chopped tomato 1 tbsp lemon juice 1 tbsp coriander leaves 2 tbsp grated coconut
Rinse quinoa with water and cook it in boiling water until it turns soft.
Heat oil in a pan and add mustard seeds, cumin seeds, lentils, slit green chillies, a pinch of hing (optional), and curry leaves.
After sauteing, add onion and wait for them to turn soft.
Add chopped tomatoes, salt to taste, and some water. Once tomatoes turn soft, add vegetables.
Add a splash of water to the pan and put on the lid. Once the vegetables are cooked, add quinoa.
Let the ingredients cook together for 6-8 minutes. Add lemon juice, grated coconut, and fresh coriander leaves for garnishing.
