This easy quinoa bowl is a delicious breakfast that gives you a nutritious start to your day. It’s also the perfect snack that is easy to make, delicious, satisfying, and filling. Here's the recipe for Quinoa Snack Bowl.

Ingredients

1 Tbsp finely chopped roasted red pepper 1 Tbsp lemon juice 1 tsp chopped fresh parsley (Optional) Pinch of salt Pinch of ground pepper Water

Step 1

Arrange quinoa, chickpeas, cucumbers, tomatoes and avocado in a wide bowl.

Step 2

Stir hummus, roasted red pepper, lemon juice and water in a bowl. Add more water to reach desired consistency for dressing. Add parsley, salt and pepper and stir to combine. Drizzle this onto the quinoa bowl.
