The festive season can take a toll on your digestion. If you want a healthy fix, you can make a nutritious bowl of quinoa salad. The gluten-free meal will not only be filling but also tasty.
1 cup quinoa, rinsed 2 cups water 1 cup cucumber, diced 1/2 red onion, thinly sliced 1/2 cup cherry tomatoes, halved 1/4 cup chopped fresh mint 1/4 cup chopped fresh cilantro 1/4 cup olive oil 2 tablespoons lemon juice 1 tablespoon vinegar 1/2 teaspoon honey Salt and pepper to taste
Mix quinoa with water and salt and boil the mixture. Let it simmer till water is absorbed.
Combine cooked quinoa, chopped cucumber, onion, tomatoes, mint, and cilantro.
In another bowl, whisk olive oil, lemon juice, vinegar, honey, salt, and pepper.
Pour the dressing over the salad and toss till everything is well mixed.
Refrigerate and enjoy a chilled and healthy salad.
