Looking for a healthy option to curb your untimely hunger? Try quinoa salad.
1 cup quinoa, 1 cup tomato (chopped), 1 green bell pepper, 1 cucumber (peeled and roughly chopped), 1 cup fresh coriander leaves (chopped), 3 tbsp olive oil, 2 tsp lemon juice, salt to taste, black pepper powder to taste, fresh coriander sprigs for garnishing
Boil quinoa in 1½ cups water for 5-7 minutes. Remove from heat, add 1 tbsp olive oil and set aside.
Combine quinoa, tomato, bell pepper, cucumber, coriander in a bowl. Mix well.
Combine 2 tbsp olive oil, lemon juice, salt and black pepper powder in another bowl. Mix well and add to salad. Toss to mix.
Garnish with coriander sprig and serve immediately.
