A delicious and mildly sweet bake, these easy quinoa muffins are the perfect snack to batch for the busy week ahead and bite into when hungry.

1 cup cooked quinoa 1.5 cups almond flour ¼ cup + 2 tablespoons brown sugar 1 teaspoon dry ginger powder 1 cup grated carrots 1 egg 1 teaspoon baking powder ½ cup unsweetened Greek yoghurt 3 tablespoons coconut oil ¼ cup chopped walnuts ½ cup dried raisins

Preheat your oven to 175 degrees Celsius, while you combine the dry ingredients together in a bowl, along with the quinoa.

Whisk together the wet ingredients separately and pour into the quinoa mixture.

Gently fold it together with a spatula and divide the batter into a greased and line muffin tin.

Bake for 25-28 minutes and check to make sure that the top does not burn. Serve warm with peanut butter.
