Do you like the Mumbai-special street food bhelpuri, you can make it healthier with millets? Try this protein-packed quinoa bhelpuri with this quick recipe.
1 cup quinoa 1.5 cups water ½ cup onion 1 cup cucumber ½ cup cherry tomatoes ½ cup cooked chickpeas ¼ cup cilantro ¼ cup mint 2 tablespoons roasted peanuts 1 tablespoon tamarind chutney 1 tablespoon green chutney 1 tablespoon lemon juice ½ teaspoon chaat masala Salt to taste
Mix quinoa and water and boil till the quinoa is fluffy. Turn off the heat.
Chop onion, cucumber, and cherry tomatoes. Mix in fluffed quinoa.
Add cooked chickpeas, cilantro, mint, and roasted peanuts.
Combine with tamarind chutney, green chutney, and lemon juice.
Sprinkle chaat masala and toss till well combined. Serve immediately.
