Quick Thai Style Tofu Stir Fry For Dinner

Make this spicy tofu stir fry, flavoured with fresh basil to eat over rice for a healthy, meatless bowl meal during a weekday dinner.

INGREDIENTS

200 grams tofu, cubed 2 tablespoons vegetable oil 1 red bell pepper, sliced 1 onion, sliced 1 cup fresh basil 2 tablespoons soy sauce 4-5 cloves garlic ½ tablespoon raw sugar 1 teaspoon minced ginger 2 bird’s eye chillies, chopped Salt and pepper, to taste

METHOD

Heat the oil in a pan on high heat and fry the onions until browned.

Add the red bell pepper, minced ginger and garlic and sauté for 2-3 minutes.

Add the soy sauce and bird’s eye chillies and toss to combine.

METHOD

Tip in the cubed tofu and season with plenty of salt and pepper.

Lastly, add the sugar to balance flavours followed by the fresh basil.

Combine well and cook until the basil is wilted but not browned.

METHOD

Serve hot over steamed rice and a fried egg, if needed.
