Avial is a popular South Indian mix-veg dish that is prepared using a variety of seasonal vegetables, coconut, and curd gravy. It is quite popular in Kerala. Since the dish has curd, it makes it a summer delight to help you regulate body temperature, and it is easy to digest. Check out the recipe.
1 cup chopped pumpkin & carrots 1 cup chopped cucumber 1 cup chopped ash gourd 1 cup chopped raw banana 1 cup chopped drumsticks ½ cup chopped French beans 1 teaspoon cumin seeds ½ teaspoon turmeric powder 1 cup grated coconut 1 cup curd 2-3 green chillies 10-12 curry leaves Water and oil as required Salt to taste
Rinse all the vegetables, peel their skin, and chop them. While chopping bananas, keep them in water to avoid darkening.
Grind coconut with cumin seeds and green chillies along with some water to make a smooth paste.
In a kadhai, add coconut oil and saute vegetables like drumsticks, carrots, and French beans. They take more time to cook.
Add turmeric powder, water, and salt to taste. Once the mixture comes to a simmer, add pumpkin, ash gourd, cucumber, and other vegetables.
Let the ingredients cook at low flame for a couple of minutes. Add coconut paste, cook for 5 minutes, and add curd.
After a couple of minutes, switch off the flame, garnish the dish with curry leaves and fresh coriander leaves and cover with a lid until you have to serve.
