Quick Minestrone Soup To Make For A Hearty Lunch

A great way to use up leftover vegetable bits, pasta and cooked beans, this delicious and comforting soup is perfect for gloomy monsoon afternoons spent working.

INGREDIENTS

1 cup tomato pasta sauce ½ cup cooked beans (rajma, chickpeas) ¼ cup macaroni 3 cups water 1 vegetable stock cube ¼ cup carrots, chopped ½ zucchini, chopped 1 teaspoon dried oregano 1 teaspoon red chilli flakes Salt and pepper, to taste

METHOD

Add the water, pasta sauce, stock cube and beans to a large pot and bring to a simmer.

Tip in the carrots and zucchini, before adding the oregano, chilli flakes, salt and pepper.

METHOD

Add the pasta and cook until the macaroni is tender before adjusting seasoning, if needed. Serve warm.
