Millets are the stars of the ingredients thanks to their unmatched nutritional benefits and taste. If you are shifting to a millet-based diet and want a quick meal, the one-pot millet pulao would be the best.
1 cup mixed millets 1 onion 1 tomato 1 green chilli 1 inch ginger 2 cloves garlic 1 teaspoon cumin seeds 1 bay leaf 2 green cardamoms 1 cinnamon stick 1 teaspoon garam masala 1/2 teaspoon turmeric powder 1/4 teaspoon red chilli powder 1/4 cup chopped coriander leaves Salt to taste 2 tablespoons oil Mixed Vegetables
Rinse the mixed millet and soak for half an hour. Drain and keep aside.
Heat some oil and saute cumin seeds, bay leaf, green cardamom, and cinnamon stick.
Add chopped onion, ginger and garlic. Mix in tomatoes and cook till soft.
Stir in turmeric powder, red chilli powder, and garam masala.
Add vegetables like peas, carrots, and cauliflower. Pour some water and boil.
Add the millets and let the mixture simmer. Garnish with coriander leaves and serve.
