Kaju curry is a rich, creamy Indian dish made from cashews and spices. This flavourful curry, with its tangy tomato base, is perfect with naan, chapati, or steamed rice for a satisfying meal.
1 cup cashews 1 tbsp butter or oil 1.5 cups chopped tomatoes 1 tej patta ½ cup water 18-20 cashews (for paste) 1 tsp ginger-garlic paste 1-2 green chillies ½ tsp kashmiri red chilli powder
½ tsp garam masala 2-3 tbsp cream 2 tbsp butter ¼-½ tsp sugar 1 tsp kasuri methi Salt to taste Coriander leaves for garnish
Heat 1 tbsp butter in a pan and sauté 1 cup cashews until golden.
Remove cashews and set aside. In the same pan, sauté 1 tej patta.
Add 1.5 cups chopped tomatoes and ½ cup water. Cook until the tomatoes soften.
Blend 18-20 cashews into a fine powder and puree the cooked tomatoes separately.
In the same pan, heat 2 tbsp butter, add ginger-garlic paste and sauté until fragrant.
Add the cashew powder, tomato puree, spices, and water. Simmer for 3-4 minutes.
Stir in the sautéed cashews, cream, kasuri methi, and garam masala. Simmer for 2 minutes before serving.
