Coconut dosa is a simple and unique South Indian breakfast made with rice and grated coconut. This light and fluffy dosa pairs perfectly with chutney or kurma and is quick to prepare.
2 cups raw rice 1 teaspoon methi seeds 1 cup grated coconut 1 cup thin poha Water (for grinding) 1 teaspoon salt
Soak rice and methi seeds in a large bowl with enough water for 4 hours.
Transfer to a mixer jar and blend to a smooth paste. Transfer the rice batter to a large bowl.
Blend 1 cup of grated coconut in the mixer with 1 cup of water. Add the coconut paste to the rice batter and mix well.
Cover and ferment for 8 hours in a warm place. After fermentation, add salt and mix gently.
Pour the batter over a hot tawa and cover. Simmer on low flame until the top is cooked completely. Serve hot coconut dosa with coconut chutney.
