For the times when you want to quickly whip up a healthy meal, you can go for Gujarati khichdi. Made with the goodness of dal, rice, and ghee, it is extremely healthy and light on your gut.
1 cup split mung dal 1 cup rice 3 tablespoons ghee 1/2 teaspoon cumin seeds 1/2 teaspoon mustard seeds 1/4 teaspoon hing 1 tablespoon ginger 1/2 tablespoon garlic 1/2 teaspoon turmeric 1 teaspoon black peppercorns Salt to taste 2.5 cups water Chopped coriander leaves for garnish
Rinse and soak mung dal and rice for at least half an hour.
Heat ghee and add cumin seeds, mustard seeds, and hing.
Add grated ginger, minced garlic, turmeric, and black peppercorns, and saute.
Add the tadka with the soaked rice and dal to a pressure cooker. Season with salt.
Pour in water, close the lid, and cook for 4-5 whistles on medium heat.
Garnish with chopped coriander leaves and ghee, and serve hot with a dahi.
