Spend Saturdays unwinding in the kitchen with some therapeutic baking activity, making a savoury cheese souffle to enjoy in this pleasant weather.

2 eggs 1 tablespoon all-purpose flour 3 tablespoons grated cheese 1 tablespoon milk Salt and pepper, to taste

Separate the whites and yolks of the egg and mix the milk with the yolks.

Beat the egg whites until stiff peaks form and set aside.

Combine the flour and cheese with the yolks and season with pepper. Salt, if necessary.

Add the beaten whites to the mixture and fold gently.

Transfer to buttered ramekins and bake in a preheated oven at 180 degrees Celsius for 10 minutes. Serve immediately.
