Prepared in less than half an hour, this flavourful dish combines eggs with veggies and spices. Make egg bhurji at home with this simple recipe.

4 eggs, 2 onions, 2 tomatoes, 3 green chilies, 1 capsicum, 2-inch ginger, 1/2 cup coriander leaves, 3-4 curry leaves, 2 tbsp vegetable oil, 1 tsp jeera, 1 tsp red chilli powder, 1 tsp turmeric powder, pav bhaji masala, a pinch of asafoetida, salt as per taste, 2 tbsp butter

In a mixing bowl, whisk the eggs properly and keep aside. Then take a pan and heat oil in it. Now add cumin, onions, hing, chillies, curry leaves, capsicum and ginger.

Sauté well for 3-4 minutes. Add tomatoes, coriander leaves and saute again for 2 minutes.

Add butter, pav bhaji masala, red chilli powder, turmeric, salt and mix well. Finally pour in the beaten eggs and keep whisking until cooked.

Top it up with butter. Garnish with coriander leaves. Enjoy.
