Oats khichdi is a healthy twist on the traditional Indian comfort food. Combining the goodness of oats, lentils, and vegetables, it’s a nutritious and quick meal perfect for any time.
1/2 cup oats 1/4 cup yellow moong dal (split yellow lentils) 1/2 cup mixed vegetables (carrot, peas, beans) 1 small onion, chopped 1/2 teaspoon cumin seeds 1/4 teaspoon turmeric powder 1/2 teaspoon ginger, grated 1-2 green chilies, chopped (optional) Salt to taste 2 cups water 1 tablespoon ghee or oil
Rinse the moong dal and cook it with water until soft. In a pan, heat ghee or oil, add cumin seeds, and let them splutter.
Add chopped onions, ginger, and green chilies; sauté until golden. Add the mixed vegetables, turmeric powder, and salt; cook for 2-3 minutes.
Add the cooked dal and oats; mix well. Pour in water, cover, and cook for 5-7 minutes until oats are soft. Serve hot with a dollop of ghee.
