Maharashtrian Poha is made from flattened rice, seasoned with onions, green chillies, and aromatic spices, and is perfect for a nutritious start to the day. Here is a recipe to try:
2 cups flattened rice (poha) 1 large onion, chopped 1-2 green chillies, chopped 1/4 cup peanuts 1/2 teaspoon mustard seeds 1/2 teaspoon turmeric powder
A handful of curry leaves 1 medium-sized potato, diced 2 tablespoons of oil Salt to taste Coriander leaves, chopped (for garnish) Lemon wedges (for serving)
Rinse the poha under running water until soft. Drain completely.
Heat oil in a pan, fry peanuts until golden brown, and set aside.
In the same pan, throw in mustard seeds, curry leaves, and chopped green chillies in oil.
Saute a finely chopped onion and cook until translucent. Toss in the diced potatoes and cook.
Add turmeric powder and mix well. Stir in the rinsed poha and salt.
Now, add the fried peanuts and mix. Garnish with coriander leaves, and serve hot.
