Vegetable soup makes for a comforting and nutritious meal any time of the year. Packed with a variety of seasonal vegetables, it's light yet satisfying. Ideal for detoxing or as a wholesome, warming dish on chilly days. H.ere’s a simple recipe to make it
1 carrot 1 potato ½ cup green beans ½ cup peas 1 tomato 1 onion 1 garlic clove
1 tbsp olive oil or butter 4 cups vegetable broth or water 1 tsp black pepper ½ tsp cumin powder Salt Fresh coriander
Heat olive oil or butter in a pot. Add chopped onions and garlic, sauté until translucent.
Add the carrots, potatoes, green beans, peas, and tomato. Cook for a few minutes, stirring occasionally.
Season with salt, pepper, and cumin powder (if using). Stir to coat the vegetables evenly.
Pour in the vegetable broth or water, bring to a boil, then lower the heat. Simmer for 15-20 minutes until vegetables are tender.
Garnish with fresh coriander and serve hot with bread or on its own.
