When there is hardly any time and you need a quick fix for the lunchbox, try these easy vegetable noodles. Toss cooked noodles with sautéed vegetables, soy sauce, and seasonings for a tasty meal. They’re convenient, satisfying, and ideal for a delicious, on-the-go lunch. The veggies add some nutrition too.
200 grams of noodles 1 tbsp oil 1 tsp mustard seeds 1 tsp cumin seeds 1 onion 1 bell pepper 1 carrot 1 cup cabbage 2-3 green chillies
2-3 tbsp soy sauce 1 tbsp tomato ketchup 1 tsp red chilli powder 1 tsp garam masala Salt
Boil the noodles according to package instructions. Drain and set aside.
Heat oil in a pan. Add mustard seeds and cumin seeds. Once they splutter, add the chopped onions and green chillies. Sauté until onions are translucent.
Add bell pepper, carrot, and cabbage. Stir-fry for a few minutes until vegetables are slightly tender but still crisp.
Add soy sauce, tomato ketchup, red chilli powder, garam masala, and salt. Mix well.
Add the cooked noodles to the pan. Toss everything together. Serve hot with sauces of your choice.
